I was really enjoying it, harassed a fully crewed galleon in my solo sloop.
Was great fun, until I climbed on board their ship and it just plummeted to a lagged out mess.
Same as before, nothing's changed.
Will this ever be sorted?

Ahoy there, if you check through the past patch notes, you'll see numerous mentions of optimisations being made to the game. In my experience I very rarely get issues with lag, and these tend to occur at outposts, 2 specific times come to mind.
I'd suggest submitting a report via Support so the teams are aware of your experience.
@keasy3 Beware, permanent black screen is back! I died while ramming a 3-man brig and waited over 3 minutes just to spawn onto the fairy of the damned before backing out and rejoining the server.
