So in the trailer for captaincy there was a pirate playing a piano so i was thinking of them adding a playable piano to your boat or to every tavern or both.

Would either go unused or would mostly be used for spam. As well, the game doesn't give you a good interface to play the instrument, and if you mean it should be able to play the shanties already in the game, the reason you can't do that just like the violin and flute, is because they would have to make it for every song again.
