In game people use a controller as it gives smoother movement then say a PC.
But a trick you can do is lower your mouse DPI so it isn't jittery when moving your view.
Also im not sure what you question hints at. Do you want to datamine SoT assets and do animations with them?
Yes Unreal and Blender from what I know does have animation potential for 3D.
Unreal is used in almost every game trailer for example, especially true for Sea of Thieves.
