Me and my friends are thinking of buying the game, but first we want to be sure that we can have at least two different playthroughs going on at the same time without having to purchase multiple copies of the game.

If you're talking about doing (Pirates o/t Caribbean) Tall Tales - you can do those as many times as you like.
But there are no Save slots for your character, but most Tall Tales have more than one checkpoint.
You and your friends might need to read up some more on this game (or watch others play) though - this game might be different than you expect.
