Can someone tell why bigger and heavier ship (galloeon) is faster than small and light ship (sloop)?
Speed of ships
Ships are the same speed. It's the environment that often gives one ship a speed advantage over the other. A sloop in choppy waters is going to get run down by the bigger ships due to dissipation caused by the higher waves. Where as a sloop on glassy waters will never get caught by the bigger ships if sailed correctly. Keep this in mind when sailing!

Competency of the person(s) sailing said ships is what it comes down to.
