is it true that if you start a tall tale quest, for example shores of gold, you need to finish it in one run? or can you save at certain points, dont have a lot of time to do everything in one run

This is true, you will need to get to the end of the specific tale you are on for it to track as complete the next time you start the game.
Each tale takes around 1-2 hours on average... so you will need to set aside time to get to the end.

@queensdream1209 the only thing that saves on ongoing tales are the commendations and diaries.
Let's say you are on a tale which you already solved the first page and found one diary then decided to quit. The next time you'll play you need to start over, but that diary is already counting on your commendation tab.
@queensdream1209 no, the tall tale quest diary will not save progression, every time you start one tale you need to start from the beginning.
Only commendations. let's say that Quest has a step that requires you to find a specific item and you have a commendation related to that step of the tale. The commendations is unlocked but that step isn't a safe point (you'll need to do it everytime you play the tale again).
The other diaries that I was referring to are some lore books that every tale has hidden in the world. Each tale has 5 lore books you need to find to unlock a commendation. Those are saved when you find one.
Let's say you start a new quest and your diaries commendation has (0/5). You find one it will remain (1/5) even if you quit the game.
