Everything sinks eventually. The key floats for a bit. And no. No mermaiding with loot

They float once the boat goes fully under just like any other loot item, and they will stay floating there for a pretty decent amount of time from what I've seen, so if you have a good idea of where it was it is indeed possible to find it again though admittedly it's not the easiest thing to spot even if it does glow!
You cannot use a mermaid while holding it however.
