Has anyone made a map of animal spawns yet?
You can't, because the spawns are procedurally generated. I went to one island and it had pigs and chickens, but the next day the same island just had snakes.

They spawn on the same islands, if you don't see the one you need on the island, just sail out of the little circle around the island and everything on the island will re spawn in a few mins.
