Wouldn’t it be great to be sailing and in the middle or edge of the map go through a blizzard, smashing your ship through the ice, trying not to get stuck. Polar bears awaiting you on the ice, you break through with the hull of your ship. Blizzards making you have slightly worse vision would be cool too. This would be great for lore, ice pets or frozen shipwrecks, hidden smugglers representatives in the ice, fishing camps for the hunters call, even treasure frozen in the ice.

It wouldn't.

As someone who passionately hates winter and everything cold related, the last thing I want to look at in SoT is winter related stuff - except for Xmass decorations and a few nonsensical player skins. No ice, no snow, no polar bears, no penguins, no blizzards, no Eskimos. Nope.
SoT is my virtual escape to the Caribbean (to be more precise - return, while I'm not physically there), and I want it to stay that way.

It wouldn't. Ice has no place in the Caribbean climate, and that is one of the very few lines I draw when it's about SoT content.
Add even deserts though it wouldn't make much or any sense, or Amazon-like jungles for all I care, but no snow and ice tyvm.
I like my SoT warm. Or volcano hot. 😂
