When I use Discord while playing Sea of Thieves, the game skips and bugs around so much that it forces me to use the Xbox app, but when I use that it's just so buggy and broken it's unbearable. There's zero reason I can think of for Discord being the only thing that lags Sea of Thieves for me.

Do you have google chrome open while playing? (causes stutter for me)
