I've been thinking about buying a Pirate Appearance Potion in order to find a less chunkier pirate, but I am still fond of my pirate I have right now. If I buy a potion, am I forced to use it immediately? And if I buy another one, can I go back to my old, chunky pirate in case if I regret changing my pirate?

You don't have to use it immediately. You'll be prompted to use it, but can always choose not to. I've still got one saved, just in case.
Also, if you do use it, you can still back out of the IPG without choosing a new pirate. So if you spend awhile flipping through pirates without any luck, you can cancel out and try again later.
However, once you DO change your pirate, there's no going back. Buying a second potion just gives you another spin on the IPG.
