I'm playing Sea of Thieves and I can't understand why the game doesn't have large servers that hundreds of people could play on at the same time? That would be a lot more fun, wouldn't it?

@onerousleaf980 more ships on a server would be great, however the ships are the actual limiting factor. The ships are an Immense resource hog for the servers due to them being fully physics based objects, the amount of calculations going on with that is so hugh that Even with top of the line server hardware 6 ships is still an absolute limit
While there are a great deal of resource constraints that come along with this game, I want to blame supporting legacy hardware like the XBox One because there is zero reason why a company propped up by Microsoft should have issues getting their hands on enterprise speced servers to host their game on, you don't want to ignore the vision of the game designers. There is a delicate balance between PvE and PvP that is trying to be maintained. The game cycle is collect treasure, defend treasure, turn in treasure, repeat. If there were dozens of ships and hundreds of players the game in its current state would just be a naval combat battle royale. There's nothing wrong with that, but it's not what the game is.
And let's presume your argument is "well then just increase the map size!" My response would then be, what's the difference? If you're going to increase the map size by 2000% just to increase the pirate count by 2000%, you're not fundamentally changing the game: which is in reality the encounter rate. A pirate needs time to collect treasure, spot a ship, chase the ship, engage the ship, repeat. That cycle is the game.
If you just want more players on the seas to participate in more PvP, then go vote on hourglass; that's not adventure mode.
