I’ve seen this suggested before and a lot of the responses was in disagreement, they were mostly concerned with server hoppers keeping their supplies but as you can see now there are a couple of ways to server hop while keeping supplies so it shouldn’t be an issue to save it when you log off.
Portal Hopping: You can keep all of the supplies you have on your boat including crates. While it can bring you to a new server, you're not guaranteed to be on a new server in every instance, additionally, players utilizing this tactic will be spending several minutes doing nothing in order to find ships to sink, which wastes more overall time on hunting compared to simple server hopping.
Scuttle Hopping: The introduction of the new "Scuttle and Change Seas" option has lead to a new tactic where using this feature allows you to keep whatever was in your pockets in between servers. Your ship's supplies reset to default, but since your pockets are not emptied, and you're automatically healed on the way to the next server, the worst that can happen is you have 1-4 pockets of good supplies. While that can be dangerous for other crews as you'll always spawn on an outpost, where more good supplies will likely be available, it's ultimately more and less effective than portal hopping, as Scuttle Hopping is leagues faster than Portal Hopping, but you're much more gutted for supplies if you don't spend time preparing your boat.
The concept of saving supplies between sessions will always be voted against just because that's too much power from the outpost dock. There are little to no reasonable solutions that would make it satisfying for players that probably don't even need to save supplies between their once-a-week/once-a-day sessions.

Your spot on a server is held for 5-10 minutes IF there was an unexpected disconnection (i.e.: Lost connection, Hazelnutbeard, Alt+F4/Go to Xbox Menu) and you're trying to rejoin. If you choose not to rejoin or the rejoin time expires, your spot on the server is lost. Selecting (and confirming) Leave Game removes your spot on the server immediately, and you cannot rejoin unless you're being invited to the same crew via a crewmate already on that ship you left.
Furthermore, we are still spawning a new logged-in ship on the outpost and if we are holding the spot for a while for this team - they will visit the same island and will not over looting.
In the case of a captained ship, once the captain leaves the ship and doesn't return, anything that happens on that ship is no longer logged for that captain. If the captain leaves a server and joins a new one with their boat, their spot on the previous server is already lost and whatever happened to their ship upon leaving is already saved before they log into the next server with their boat. A lone captain can save a bunch of supplies based on your suggestion, which is what I pointed out, since I am fully aware how the ship settings are saved on a captained boat.
The better solution to the issue being brought up is to not let suggestion be implemented in the first place, there is nothing that can be done to prevent this.
