I just started back up on this game. I regret every penny I spend on it tonight. I spend 2-3 hours gathering stuff and exploring (i.e. having fun). A friend dropped in and we were almost immediately assaulted by another ship and I died twice within 5 minutes.
It's 5 mins following 3 hours of "fun". That 5 mins of PVP is less of a problem if you turn in loot often and... I keep saying this... don't worry about losing. You lose, you learn, you come back better.
This isn't fun.
You previously said you had 2-3 hours of fun though.

but it's just as present here and I can't help but to look over my shoulder every second I am in it now.
Exactly how you should be playing. Keep one eye on the horizon.
Lot's of people here will say things like "git gud" or "just part of the game", but realize that there are NOT a lot of players on this game, and this is a big reason why.

Give people a PVE option and you'd have a lot more players.
And they'll leave within 2 months anyway when they realise that the threat of PvP, the tension, is really the biggest challenge in the game. PvE threats can be overcome pretty easily with not a lot of experience.
Take away the ability to grind to legendary pirate or whatever, I wouldn't even care. I don't care about rep at all, I just want to play the game and have fun,
If you don't care about rep, then why care about losing... or even succeeding, for that matter? By this metric, you lose nothing anyway if you lose in PvP.
but playing against these people who have 100s of hours in this game isn't fun at all.
The best thing about SoT is that everyone is equal at the start of a session. Experience can be acquired pretty quick with practice, you can learn a lot even watching streams (I recommend xShumbax, he's really good at teaching the game), but experience doesn't make you any more powerful.
I am likely to uninstall and go to something else; that is a real shame because this has seriously relaxing gameplay that I really loved.
I'm not gonna lie and say I wouldn't play whatever fantasy game you have in your head, but that's not Sea of Thieves. I've said it before but I would personally love Rare (maybe with help from Obsidian) to make a fully fledged singleplayer/co-op story RPG based on the tech used here, but that's wishful thinking.
As a PvE-focused player who sails solo 90% of the time, I can only advise you give the game more of a chance. We've all had bad days/nights in this game but the good far, far outweighs the negative, in my experience. It's about adventures and stories you create, solo and with friends, it's unpredictable and challenging at times, but that's what makes the game unique.
