I'd like some more variation in the weapon choices, perhaps a smaller dual weilded pistol set, or a dual wield sword and dagger combo.
Pirates and seamen of this age had pikes to deter boarders and krakens; an axe would also be cool?

However everything you just mentioned (except for the shooting under water and the scope on the long rifle) is from pirate lore.
We have written documentation from people claiming that they have seen every single thing of that, so in a certain way we have to believe that it was during that time.
Was it there? less than a 1 procent chance.
Does it make for a great game? hell yeah :DAnd we both come from a country that made the biggest Pirate legend there is, The Flying Dutchman :D

But having a hook on his left hand makes it impossible :(
So wouldn't a great idea be to allow the hook to be used as a melee weapon!

Yeah, he was carrying six guns on him at the same time during battles.@elite-assasin87 Balance IS hard. And Dual-wielding especially is a tricky one. If it's an optional type feature where you could have one or two guns at the same time, it needs to be made to fit. As SoT is currently made, it's not made with a place for it. The Guns are already far more prevalent than they should be, and they deal plenty of damage. A lot of people I see even carry two guns as it is. The sword was really supposed to be the ol' reliable. Yet everyone is on a blunderbuss meta now. Giving access to even more immediate ranged firepower creates a problem. Kill Times go down. Ranged combat increases. "Longer reloads" doesn't just magically fix this. Either you have a ridiculously powerful dual wield set or a completely useless single weapon. If you nerfed damage while carrying two then whats the point? But if you didn't it would be far too powerful.
And don't think that just making the sword more powerful to compensate works. It doesnt. This is what is called entering a power loop. Opposite of nerfing everything into oblivion until everything is a sponge, making everything more powerful to match starts to become a one-off death fest where little matters.
There's more pressing issues in SoT combat than giving even more viability to guns at the moment, which are already too powerful in PVP
