Some stories are noobs that just do not understand how easy it is to repair a boat and bail water.
BUT!!!!
One google search of "Sea of Thieves Hacks" will provide multiple youtube videos of ESP hacks and AIMBOT hacks.
They are real. They are sad. Is it 1% of the PC community or 10% I don't even care to guess. I have no issues thus far playing the game but to suggest these are not real issues is silly.
Only run into one hacker myself so far dude took 2 blunderbuss rounds to the chest (headshots don't matter) point blank. Also they somehow put a hole in our boat without cannon fire or gunpowder. Couldn't get screen shots or video honestly just wasn't thinking about it. It's frustrating though hopefully Rare will get some sort of anti cheat client on the servers soon.
You need to aim below the water line to sink a ship. Ships don't have health pools. You need to actually puts holes so they fill with water to sink.
Also, the blunderbuss was recently nerfed. Aiming for the head is a bad idea to begin with since you're going to be missing pellets on shots from the spread. You need to aim for the body and not the head. It takes around 2-3 shots now to kill someone with full health. And more if they heal with a banana.
You need to blast holes in the lower deck for it to take on water, Shoot the upper deck when the lower deck has so much water for the upper deck to start getting in water faster.
The ship will start to go under water then the water will start flowing into the upper deck.
You need to blunderbuss their torso for all the pellets to hit, If you hit the head with the blunderbuss all of the pellets won't hit. (Keep in mind you have to be extremely close to one shot the enemy like up on their face close)
Cutlass does 20% damage.
Cutlass lunge attack will do 49% damage.
Blunderbuss does 15% damage per pellet
Flintlock does 53% Damage.

The ships are server side, I'm pretty sure - this is why they will float off into space sometimes if you get disconnected or suffer extreme lag as you are no longer getting positional information about the ship from the server and your client just continues to "guess" where it should be based on last known speed, direction, etc... This means you can't "hack" the health of your ship (and ships don't have health).
Invincible players is a different story.
