Because the same game developers made Donkey Kong where you eat bananas. So we are all monkeys basically eating bananas for health.
This is absurd and common knowledge among sailors. BANANAS ARE BAD LUCK ON BOATS. NOBODY sailed with bananas back in the day simply because it freaked out the crew so badly. The bananas spoiled quickly and the gases they released rapidly spoiled the rest of the fruits and vegetables. THEN they got scurvy and died which is really bad luck..
I honestly wonder/assume if the bananas were chosen as a far off reference to the DKC games, especially considering how the 2nd/most-popular game was steeped in Pirate theming. But that’s probably just me trying to make sense out of a seemingly bizzzare choice of bananas vs Oranges/limes.
Also can we get a crocodile figurehead? Thanks.

Absolutely that's why. Rare has a bunch of easter eggs in this game looking back at their past games.
