The hermit's cave is tucked away - I would recommend https://maps.seaofthieves.rarethief.com/ for help with riddle locations.
That green gem holding mermaid is something you can attack to get the mermaid and cash it in at an outpost. But the green ones sometimes need two of you to take them down.
