I played immediately after I open the server and I unlocked several achievement, while playing today even though I did what some achievement were asking me, did not unlock them, examples? Drink at the inn with another crew, surf at night without lights in the storm, use the wheel of messages / emoticons on the ship of the damned to communicate with someone else, sink an opposing ship. All of the things I did but did not give me the achievement

I've had the same issue. In the past, I've been able to fix the problem by clearing the cache on my Xbox. What you're going to want to do, is hold down the power button, on your console, until the unit powers down. Continue to hold the button down, for about 5-10 seconds, after the console has shut down. You can almost hear it, when it's time to let go.. Hopefully you'll notice that you're able to get your achievements, once again! Best of luck, and safe travels upon the sea!!
@wymerz Do you know if Achievements you should unlocked, are unlocked after the "Patch" or do we have to do the Achievements again? (that would be bad for some Achievements like reach Level 5 etc)
Once the servers catch up, yes you should be receiving those achievements. Craig Duncan and Joe Neate explain more on this topic in their most recent developer update.

I subscribed to game pass on my xbox one and playing only on pc. Started playing 21.03.2018. Only 22.03.2018 i have earned 2 achievements. Another days i did not earn nothing...There has been official posts from rare about these things.. I can't remember the link but the massive influx has caused a variety of issues. They've had to disable achievements for the servers to cope, launch day saw them refusing new players into the servers and there's many people waiting on preorder items. It was stated they're expecting these things back up and running in the new week.
Be patient, all new mmos deal with this trial and error during launch, it WILL settle down

3. Achievements being delayed
We have had to temporarily disable achievements being awarded to allow our services to cope with the scale of the messages flowing through them. We are storing all awarded achievements, and they will be awarded to players once we are through this weekend and we release the first game patch.
Status: Believed fixed for next game patch (ETA: early next week).
@wontolla-jack Yeah me and a couple buddies beat back the kraken and didnt get an achievemant for it, glad to see its being worked on.
