I feel like the boats, mainly the sloop, have been pulling more left/right than they should be. I don't know if this is because of the changes to sails, but it's annoying to have my ship move left/right when I have the wheel perfectly centered.
Boats pulling to one direction or the other
Going anywhere that’s between southwest and north on the compass always pulls the ship off course. I haven’t felt it’s doing so any more than normal though.
Your speed does have an impact, if you are going slow you’ll be pulled off less than if going faster.
So if you normally don’t bother to adjust your sails but now with the changes you are and are going faster than before, that might be why.Personally I never bothered to angle the sails on the sloop because the only time I got much speed was when I had full wind from behind, so the most I’d do is move it ever so slightly left or right if I had back wind. Now I try to manage my sails a little better. So if you were like me then that might be why it’s feeling like it’s happening more.
As one could imagine, in real life you're not going to ships just go perfectly straight all the time. It's just how physics works. If the wheel being top dead center worked all the time, that would most surely make for an arcade-like feel to simulated sailing. I understand that there are cartoon-like aspects of the game/unrealistic things that keep the game from being totally boring to overall players. But as for me, I appreciate that they have simulated the ocean pulling ships, especially smaller ones, and ships that are at high speeds. They've done a wonderful job on it. As a matter of fact, I'd prefer that ships could becalmed, even have variations of it depending on what ship you're on.

No such thing as perfect center. But that why you slowly turn the wheel until your compass stops moving. Now it’s center.
