I've read online that there is in game a sign that say something to the effect "Skeleton ship sighted at X location at X:00pm." I had a assumed it would be a sign post outside around an outpost, similar to the posts that point the directions of the trading companies but interactable, yet I cannot find this. Does anyone know where these signs are located if they do exist?

Are you talking about the ones from Cursed Sails? If so then they've been gone for a while dude.

My guess is that OP thought the Cursed Sails Resurfaced anniversary event actually meant that the original event took place and googled "Cursed Sails" or looked it up on the wiki or the SoT page of way back when.
Ah, it would be interesting if they brought back old events as a hurrah but I mean they basically tried to re-create the hungering deep magic and that didn't go so well.
