Since it is still very hard to find an Xbox Series S & X's, has this ship set had another extension and if so, what is the new extension date?

The latest extension was for the end of 2021 as by November 2021 we reached the first anniversary of the Xbox Series X|S release. Rare, feeling in a celebratory mood, extended the deadline once more to the end of the year instead of the first anniversary of the console.
However, for those that haven't gotten an opportunity to get an Xbox Series X|S, could have also tried to purchase a month of Xbox Game Pass Ultimate, gaining access to Xbox Cloud Gaming and launching Sea of Thieves through that. Sometime around the Summer of 2021 the Cloud Gaming instances transitioned from being Xbox One systems to being Xbox Series X systems, allowing for those logging into Sea of Thieves via the cloud means they logged in on an Xbox Series X|S, qualifying for the reward of the Duke Ship Set.
Now the Duke Ship Set offer has passed, and who knows when it may return.

Yes. That is how a bunch of were able to get that set. The supply issues would have meant very few people could get access to the set otherwise.
