Just downloaded the game on PC, and decided to go through the tutorial to get a feel. Everything was going well until I got to the first quest. I accepted the shovel, was prompted to open the quest log, and nothing was there. No new quest, no map in inventory, no way to accept or complete the quest because it didn’t show up. I tried restarting the game a few times, same glitch. I don’t know what’s going on, if I need to reinstall or if it’s a deeper glitch, but I’d appreciate some help.

AFAIK it's always here:
map@doctorichabod open your item wheel, then press the button to switch to quests. There should be a map there.
This is different from the pirate log / quests / inventory menu, which is what I think you are looking in.
On PC, the defaults should be to hold Q to bring up the wheel, then press space bar to switch to voyages. The map should be in the top slot on the wheel.
