In the water, loot will float for roughly 5-10 minutes or so with Merchant floating the longest before sinking. It can still be retrieved while it is sinking, but once it sinks to the "bottom" of the ocean, it will despawn.
Items on shore can stay there for a couple of hours before it will despawn, not sure of an exact time on these.
Items on a players ship should not despawn at all.
Bit of a shame then, didn't want to give them the satisfaction, but I guess there's nothing I can do there.

just assume they got kraken'd, hit a keg, and flameheart spawned on their faces
you're very unlikely to ever see them again so just assume the worst and fuhgeddaboudit
