So yeah like the tittle says my game is now in Japanese and even though my region settings are set on my country ( The Netherlands ) I tried restarting the game and the PC but with no avail. Am I the only one with this issue ?

That shouldn't be happening at all. Please do submit a support ticket to alert the team to this (using the link below). Have you tried changing your language/region settings on your PC to another language to see if this fixes the issue?

I tried that to and did not work, i will submit a support ticket then
I had the same problem, for some reason the game was in japanese after installing this update, even though both my language and region settings are set to swedish and Sweden. The game SHOULD be in english, and has been for the last three years.
I did notice however that Microsoft Store had downloaded some sort of japanese localization pack a couple of days ago, so I figured it would have something to do with that. I did find a fix (sort of) efter a bit of searching in the Windows settings:
In the language settings, all the options were set to swedish, except for speech, which was set to japanese for some reason. I think this is used for voice commands or something, which I don't use. I couldn't switch from japanese to another language, but I was able to remove japanese from the list of prioritized languages in the Language settings. That seemed to work good enough, and the game was in english the next time I launched it.
All the achievements for Sea of Thieves on the Xbox app are still in japanese though, but I can't be bothered to try and fix that as well right now. I suppose I should submit a ticket as well if the problem persists.

Thanks this actually helped me and so far i see everything is back to English. The problem for me was at the language settings at preferable languages together with my own language Japanese was there to. Probably when some time ago i had to too be able to play a Japanese game i guess. Anyway i removed it on preferable languages and it went back to English for me
