There is one reason and one only why i think this would be awesome.
If i have a rowboat on my ship ill put the loot inside it if things are going badly and when i sink, sneak away and row to the nearest outpost.
i think it would be cool if once that loot has been turned in, you could pay the shipwright a fee (higher than the restore ship option) and have it spawned on the dock. I find this whole process way more immersive than just jumping into the water and mermaiding it to a new ship then sailing back for the rowboat.
It however cant spawn if there is a ship relatively nearby. So you couldnt use it as a way to ambush approaching ships.
The distance that restricts spawning could be whatever makes sense, maybe an island away or further depending on what makes the most sense.

Don't really like that idea, let me explain why.
A pirate's ship is his/her second love (first one being the sea and you might make a case that booty is the second.. but for this example lets just stick to second). You just shouldn't leave your ship behind and if you do, you need to go back to it. Having the option to just teleport your ship to whatever outpost you are at seems wrong. Plus what happens to your old ship? Is it really still your ship? or is it a clone?
Then there's the issue of trust, you can only ever trust yourself. Image you're out sailing about with a ruthless crew and one finds his/her way to an outpost. This would allow him teleport the ship back to the outpost at any given time, dropping all the loot and pirates that remain on the ship in the water. Sounds like an accident waiting to happen!
Another topic on disagreement comes with your mention of immersion. So you're saying that hitching a ride with a mermaid to the god gifted ship is less immersive than fabricating a ship from thin air? If you're looking for immersion, shouldn't you just be rowing back to your ship?
Finally once you manage to sink your ship or others helped you with it, the gods grace you a new ship. The location they pick for this ship however is deliberately a fair distance away from the place of trauma where you lost your ship and also away from all those pesky vendors that can sell you instant stock. This way you might not be enticed to immediately go back and end up in a similar situation.
Those are thoughts on the whole deal. I'm not saying it's a bad idea, I just think it's not a very good. (Although having something like that would open the doors for changing the size of your vessel without having to leave the game).
