Being chased by a well manned brig, adjusting their sails etc, going against the wind going SSE, our sails dead-wind. We pulled away very quickly. Seems the waves do have a huge impact on the ability to escape the chase of a brig and galleon, as well as the wind direction against your sail.

If we're both referring to this video (https://www.youtube.com/watch?v=h15ugvpa9C8), then I don't see that as the conclusion. There is footage where they are both sailing perpendicular to the wave direction (appears to be south or south-west direction), meaning that the waves are not tossing the sloop around, and the brig is still slowly passing the sloop with sails set to stupid and sailing into the wind. It's only when the brig changes sails that allows the sloop to start outrunning.

The brig is a pursuit ship. In ideal conditions a sloop with dummy sails (properly positioned and directly into the wind and no waves) can still outrun a brig. But you have to be perfectly aligned if you're not in island shallows.
