I am on Wintendo though, and loading up the store and looking at my library or searching for "Sea of Thieves" yields nothing sadly.

@repsejnworb Hahaha, in that case, open up the store search for Super Mario Odyssey and download that instead.
You can play Sea of Thieves on Windows 10 too using the same instruction I posted above.
@musicmee ye I know, the issue is that there is nothing in the store except the game available for pre-order.
According to the (very lacking) FAQ it should be in my Game Library already (in the store), but it isn't.

This helped, thanks. After clicking on "Insider Content", I actually had to click around a bit before Technical Alpha changed to Closed Beta, then the download started.
@xredx-harlow We don't know.... we do know there are announcements coming some time today in regard to the Closed Beta.
@khaleesibot this FAQ doesn't really tell us much. The question: What content will be in the beta just says "we didn't put everything in the beta"
Is there a change log we can read ahead of time to know what we should be looking at to test?
@mage-khadgar You don't technically need a code if you have pre ordered, you should be able to go to whichever platform you prefer and download the game as per these instructions -

I'm in Central European Time and I read that Bêta will open tomorrow at 1pm. Why so late in comparison to the others regions ?
Is it simply a mistakes (1pm/1am), knowing that correct difference time between GMT and CET is 1 hour ? If not, it's strange because it will close at the same time as everyone (9am on monday, correct time difference with GMT).
Thanks by advance for the answer !@kal-quantik It looks odd but that's because the game will be opening up in GMT at midday rather than midnight. 12PM is actually the afternoon - odd I know!
@kal-quantik No worries! I have always found the 12PM/AM thing very confusing tooo 12PM should soooo be at night!
@musicmee The whole rest of this crazy world should use the 00:00-24:00 system. Nothing to be confused about there xD
@y3llojimmy You get that code for pre-ordering. Founders need only update their Alpha client or check the Insider Hub to gain access.
