With all due respect, for someone who has played since season 6 (no idea how many hours you've played since then, but it doesn't sound like a lot) I'm surprised you don't know how to mitigate these things when they occur. From what you've posted, it sounds like your bilge either doesn't know how to bucket-grate, or isn't experienced enough to know when to call for a second bucket. If you know that the sloop is more maneuverable, and can sink a galleon easily despite having just 2 players, it sounds to me as if your cannoneer isn't hitting their shots, isn't firing chainshot effectively, etc.
Do you leave all your sails down when engaging in a fight with another ship?
When your bilge calls for a bucket, do all of you leave your posts and go down?
Do you understand the benefits each ship has in reference to wind direction?
Is your crew organized?
Do you each know your role(s) on your ship?
Does your cannoneer know what to fire, where, and when?
Does your helm communicate with those on the cannons, guiding their shots?
The answers to those questions are important, as an organized ship is difficult to sink. The solution isn't to add another player to the galleon, making the game imbalanced. The solution is to try and figure out what your crew isn't doing (or doing wrong/struggling with). By finding the issue and correcting it, you'll make your next fight go more smoothly. It doesn't matter what season you first started playing, what matters is the amount of time and experience you've learned along the way, so when you get the kraken (octopus), you'll know how to deal with it.
